Default How to cook free venison ;)

Step one:

Get someone to give you free vension. Don't cook said vension at the camp...wait till you get home.

Step two: (very important)

Take a shower.

Step three:

Season aforementioned venison.

Step four: (almost as important)

Use up bacon from camping trip. This should go unsaid but..., you don't waste vension and you never waste bacon.

Step five:

Glamor shot.

Grill.

But how was it?

It was awesome meeting you guys, I wish I could have stuck it out a little longer. I ended heading back home later that night.

Those potatoes and sausage were the bomb. I have to get that recipe from you.

It was excellent if I do say so myself. Full belly and back home. I'll put a recipe together for you. Smothered potatoes aka camp potatoes are easy.

Alright smothered potatoes time.

Ingredients:

Chopped bell peppers (frozen kind work just as well) 1 bag or two peppers
Chopped onions (same as above) 1 bag or 1 big yellow
Minced garlic
Tony's (or your choice of all seasoning)
Additional cayenne (powder kind)
1lb Sausage (I use Savoie's but any smoked or andouille will work)
1/2lb Tasso (If you can get it, it's is a smoked and seasoned pork meat)
Olive oil or vegetable oil
5lb Potatoes (brown ones in the bulk bag)

Take a magnalite or black pot (something heavy wall) and add some oil (just enough to coat the bottom) and get it heating. Add the bell peppers, onions and garlic and get it reducing. Even if you don't like them they will cook down, you won't see them, and you liked the potatoes so you need them in there.

Cut up sausage, tasso and potatoes. Add oil as necessary to keep the vegetables from sticking to the bottom. Add your meat into the pot. You are browning at this point so you do want to have enough oil to keep everything from burning but you do need to let the meat leave a brown residue at the bottom. Where I am from this is know as the "gradeau". After you have a good start on the meat and vegetables (about 20 minutes), start introducing the peeled and diced potatoes. At this point you will have everything in the pot. You will have to add oil and stir often. Once the potatoes are browning and becoming soft, you start introducing water. Don't put too much, just enough to keep water at the bottom so you don't burn. Cover and cook, check every 5-10 minutes, add water as necessary or until desired thickness.

Keep the pot covered as much as possible when you are past the browning stage. This will help to smother the potatoes and reduce all the vegetables into the mix. The thing about this recipe is you can pretty much mix and match whatever you like and cook to taste.
