Holley 80457, is an awesome match in my opinion, its 600 cfm but just bolt right on to your squaqrebore and away ya go. I actually used a squarebore adapter on a spreadbore....very minor adjustment necessary

If you are actually going to use it off road then a carb just won't cut it. If you are just going to drive down dirt roads or fire roads then a carb will be fine.

Depends on your style and wallet. I believe a 350 cfm would give you a nice response, power for the trail, and good street manners without sucking on every gas pump you pass by. But some folks have a lead foot, fat wallets, and want a fat carburetor for very heavy towing or bling.
In a pinch I put a 275 cfm Holley 2BBL on my 345 equipped 1210 and I love it. It hauls heavy loads and drives nice and I average about 12 to 14, well 11 to 13 with E10, mpg. I tend to believe carbs work better a bit on the small side because of the higher air speed through them and a better atomization/mixing and metering of the fuel. Then there's Bill's injection and a good following for that.
