Default 1968 scout 800 hot rod?

I just picked up a scout for some daily driving and cruising around with the top off. A 1968 scout 800 purchased for $1000 with hopes of keeping the total investment under $3000.

It has the 152 4cyl and a 4 speed manual. I am looking towards a more unconventional build for my scout since it will be mostly driven on the street with the occasional offroad excursion (sand and a heavy 4cyl scout prob wont mix but ohwell). Permanent convertible, stock level suspension, satin red and white paint combo, and to top off the 4x4 hot rod scene some mexican blanket seat covers for the interior.

Im looking to delete the two side style tanks in favor of a single aluminum unit as well as shave the filler caps, so those will be for sale probably along with the top.

Im looking forward to getting this thing done in time for the summer season, and hopefully spending less on gas than my v8 Jeep or 6.7 dodge.

"El Serrano," has been cruising the streets for some time now. The 4cyl runs like a top with the 4 speed, 33" tires with 3.73 gears it will hit 60 mph haha. I got the seats recovered with some red vinyl and mexican blankets. Every seal on it is currently leaking but I figure I can deal with those in the winter time, I am more concerned with adding some tunes to a cool convertible ride.
